Ingredients
The following ingredients have 4 Servings
- 2 Tbsp olive oil (divided)
- 2 Tbsp lemon juice
- 1 tsp kosher salt
- 1 tsp dried oregano
- 1½ pounds baby (~1”-1½” in diameter potatoes, halved)
- ¾ cup Parmesan cheese (grated)
- ¼ cup fresh Italian parsley (chopped)
Instruction
- Preheat oven to 400°F.
- Using a large bowl, add 1 Tbsp of olive oil, lemon juice, salt, oregano and halved potatoes; toss until well coated.
- Using a large baking dish, brush bottom of dish with the remaining 1 Tbsp of olive oil. Sprinkle Parmesan cheese evenly across bottom of dish. Place potatoes cut-side down into baking dish.
- Roast for 38-40 minutes, or until potatoes are fork tender.
- Before serving, toss potatoes with fresh parsley.
