Ingredients

The following ingredients have 4 Servings
  • 2 Tbsp olive oil (divided)
  • 2 Tbsp lemon juice
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • 1½ pounds baby (~1”-1½” in diameter potatoes, halved)
  • ¾ cup Parmesan cheese (grated)
  • ¼ cup fresh Italian parsley (chopped)

Instruction

  • Preheat oven to 400°F.
  • Using a large bowl, add 1 Tbsp of olive oil, lemon juice, salt, oregano and halved potatoes; toss until well coated.
  • Using a large baking dish, brush bottom of dish with the remaining 1 Tbsp of olive oil. Sprinkle Parmesan cheese evenly across bottom of dish. Place potatoes cut-side down into baking dish.
  • Roast for 38-40 minutes, or until potatoes are fork tender.
  • Before serving, toss potatoes with fresh parsley.
