Ingredients

The following ingredients have 4 Servings
  • 400 g asparagus (trimmed)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (ran through a press)
  • 25 g freshly grated Parmesan cheese
  • 1 lemon (very thinly sliced)
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • Parmesan (thinly sliced to serve)

Instruction

  • Preheat oven to 400°F/200°C.
  • Place trimmed asparagus in a baking tray. Drizzle with olive oil and rub with garlic. Sprinkle Parmesan cheese, arrange lemon slices on top, and season with salt and freshly ground black pepper to taste. 
  • Roast for 20 minutes and serve straight away with more Parmesan, to taste.
