Ingredients
The following ingredients have 4 Servings
- 400 g asparagus (trimmed)
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic (ran through a press)
- 25 g freshly grated Parmesan cheese
- 1 lemon (very thinly sliced)
- kosher salt (to taste)
- freshly ground black pepper (to taste)
- Parmesan (thinly sliced to serve)
Instruction
- Preheat oven to 400°F/200°C.
- Place trimmed asparagus in a baking tray. Drizzle with olive oil and rub with garlic. Sprinkle Parmesan cheese, arrange lemon slices on top, and season with salt and freshly ground black pepper to taste.
- Roast for 20 minutes and serve straight away with more Parmesan, to taste.
