The following ingredients have 4 Servings
- 1/2 of a preserved lemon, rinsed and finely diced
- 2 large cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- The juice of a medium lemon
- 3 tablespoons water
- 1/3 cup extra virgin olive oil
- 4 veal loin chops, cut 1 1/4 to 1 1/2 inches thick
- 2 cups diced grape tomatoes (I quartered mine)
- 1 cup finely diced red onion
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh oregano
- 2 tablespoons extra virgin olive oil
- 1/2 cup chopped parsley
- 6 large fresh basil leaves, thinly sliced
