The following ingredients have 4 Servings
  • 1/2 of a preserved lemon, rinsed and finely diced
  • 2 large cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • The juice of a medium lemon
  • 3 tablespoons water
  • 1/3 cup extra virgin olive oil
  • 4 veal loin chops, cut 1 1/4 to 1 1/2 inches thick
  • 2 cups diced grape tomatoes (I quartered mine)
  • 1 cup finely diced red onion
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup chopped parsley
  • 6 large fresh basil leaves, thinly sliced
