Ingredients
The following ingredients have 2 Servings
- 4 tbsp Ghee (or clarified butter)
- 2 Salmon Fillets
- 1 Lemon
- 2 cloves Garlic (minced)
- Salt (to taste)
Instruction
- If you do not have ghee, it is quite easy to make yourself. Just add about half a cup of butter to a small saucepan and bring it up to a light simmer. Do not let it burn. As the fat starts to separate from the liquid, remove it with a spoon. When all the fat solids are removed, you can remove from the heat the remaining liquid and bottle it, or use it immediately.
- In a pan add the ghee and turn the heat up to medium high. Add the salmon fillets skin side up and salt the skin. After about 2-3 minutes flip the salmon. Add the juice of 1 lemon to the ghee and baste the salmon by tossing the cooking liquid over the fish. Cook this way for about 4 minutes, then add the minced garlic. You do not want the garlic to burn at all, or it will ruin not just the garlic, but the whole fish. Lower the heat and let cook on low for about 30 seconds. Remove the fish and plate, then pour over the butter/lemon juice mixture. Garnish with a slice of lemon or some greens and serve.
