Ingredients
The following ingredients have 4 Servings
- 1 lb. crimini mushrooms
- 2 tbsp. garlic infused olive oil
- 1/4 tsp. Kosher salt
- 2 garlic cloves (chopped)
- Juice of 1/2 small lemon
- 1 tbsp. minced Italian parsley (flat leaf)
- 5 basil leaves (thinly sliced (chiffonade))
- 1 shallot (thinly sliced (optional) )
Instruction
- Heat oven to 450 degrees F. Smooth aluminum foil over a baking tray and spray with cooking oil.
- Cut large mushrooms into quarters, medium sized mushroom in half and leave small mushroom whole.
- In a bowl, toss the mushrooms with garlic, shallot (optional) olive oil, salt and pepper. Evenly spread out the mushroom on the prepared baking sheet.
- Roast the mushrooms for 10 minutes. Add the garlic and stir to combine.
- Roast until the mushrooms are tender and starting to brown, 7 to 10 minutes.
- Transfer to a serving bowl and toss with the lemon juice, parsley and basil.
