Ingredients

The following ingredients have 5 Servings
  • Butter – 5-6 tbsp
  • Olive Oil – 3 tbsp
  • Onion – ¼ cup (Chopped)
  • Garlic – 10 cloves (grated)
  • Lemon Juice (& Zest) – 2 small lemons
  • Cream – ½ cup
  • Parsley (or Cilantro) – 2 tbsp (finely chopped)
  • Pasta Cooked Water – ½ cup
  • Salt - to taste
  • Black Pepper – to taste
  • Parmesan Cheese – ¼ cup (optional)

Instruction

  • In a saucepan, heat the olive oil.
  • Add grated or minced garlic cloves and let it heat together. The flavour of the garlic gets infused in the oil.
  • Add the chopped onions and saute for a minute till it sweats.
  • Reduce the heat and add the butter. While the butter is melting, add the lemon juice. Be sure to add the lemon juice and lemon zest while the butter is not completely melted to prevent it from curdling.
  • Add the cream and cook for a minute.
  • Add some of the starchy pasta cooked water and cook for a minute or two. This will help thicken the sauce.
  • Finally add required salt, parmesan cheese and finely chopped parsley. Switch off.
