Ingredients
The following ingredients have 10 Servings
- 150 g butter
- 1 lemon grated
- 2/3 cup caster sugar
- 3 eggs
- 1/4 cup cornflour
- 3/4 cup self-raising flour
- 2 eggs
- 120.00 g butter
- 1/3 cup lemon juice
- 1/3 cup caster sugar
- 1/2 cup self-raising flour
- 1/4 cup brown sugar
- 1 tbs icing sugar
Instruction
- Cake: Cream butter, sugar and lemon rind.
- Beat in eggs
- Fold in sifted flours.
- Spread mixture into a greased round tin.
- Bake at 180C for 30-40 minutes.
- Lemon curd: Beat eggs.
- Place butter, sugar and lemon juice in double saucepan, over low heat.
- Add eggs quickly to prevent cooking.
- Continue stirring until mixture thickens.
- Allow to cool.
- Crumble: Rub ingredients together to resemble breadcrumbs.
- Place mixture on a biscuit tray, lined with baking paper.
- Bake at 180C for 10-12 minutes.
- Place cake on a plate, underside up.
- Spread lemon curd over cake.
- Top with crumble mix, and dust with sifted icing sugar.
