Ingredients

The following ingredients have 24 Servings
  • 1 cup butter (softened)
  • 1 1/2 cups sugar
  • 3 whole eggs
  • 2 Tablespoons lemon zest
  • 2 Tablespoons lemon juice
  • 1 teaspoon vanilla
  • 2 3/4 cups cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 cup Lemon Curd
  • 2 cups Lemon Buttercream

Instruction

  • In a large mixing bowl, cream butter.
  • Mix in sugar until mixture is light and fluffy.
  • Mix in eggs.
  • Mix in zest, juice and vanilla
  • In a separate bowl combine flour, baking powder and salt.
  • Mix in half the flour mixture into the butter mixture
  • Mix in milk.
  • Add remaining flour. Stir just until combined.
  • Pour into paper lined cupcake pan and bake in a preheated 350 degree oven for 15-17 minutes. 
  • Let cool in pan for 5 minutes. Remove from pan and let cupcakes continue cooling on a baking rack.
