Ingredients
The following ingredients have 24 Servings
- 1 cup butter (softened)
- 1 1/2 cups sugar
- 3 whole eggs
- 2 Tablespoons lemon zest
- 2 Tablespoons lemon juice
- 1 teaspoon vanilla
- 2 3/4 cups cake flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 cup Lemon Curd
- 2 cups Lemon Buttercream
Instruction
- In a large mixing bowl, cream butter.
- Mix in sugar until mixture is light and fluffy.
- Mix in eggs.
- Mix in zest, juice and vanilla
- In a separate bowl combine flour, baking powder and salt.
- Mix in half the flour mixture into the butter mixture
- Mix in milk.
- Add remaining flour. Stir just until combined.
- Pour into paper lined cupcake pan and bake in a preheated 350 degree oven for 15-17 minutes.
- Let cool in pan for 5 minutes. Remove from pan and let cupcakes continue cooling on a baking rack.
