Ingredients

The following ingredients have 12 Servings
  • 1 cucumber (skin on)
  • Juice of 1/2 a lemon
  • 1 tablespoon lemon zest
  • 1 cup (250ml) coconut water
  • 1 tablespoon agave nectar (honey or equivalent favourite sweetener)

Instruction

  • Add all ingredients to a high-speed blender and blitz until smooth. Pour into popsicle moulds and freeze until solid.
  • Alternatively, puree the cucumber with a hand held emersion blender until smooth. Mix with the other ingredients until well combined. Pour into popsicle/ice lolly molds and freeze until solid.
