  • 3 cups unsweetened flaked coconut (divided)
  • 2 cups unsalted butter, room temperature
  • 1 Tbsp vanilla extract
  • 5 cups powdered sugar
  • ¼ cup milk
  • ½ cup fresh lemon juice (~3 lemons)
  • 1 Tbsp lemon zest (~1 lemon)
  • 1/3 cup sugar
  • 3 large eggs
  • 6 Tbsp unsalted butter (cut into pieces)
