Ingredients
The following ingredients have 4 Servings
- 6 small zucchini (or 2-3 large)
- 1 tsp. salt
- 1 1/2 lb. chicken cutlets (about 5-7 cutlets)*
- 1/3 cup All-Purpose Flour*
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- 4 Tbsp. butter, divided
- 2 Tbsp. olive oil, divided
- 2 large fresh lemons, squeezed (about 1/3 cup)
- 3 Tbsp. capers
- 1/2 cup white wine (or chicken broth)
- 2 cloves garlic
- 1 tsp. fresh basil
- 1 (14.5 oz.) can diced tomatoes with chiles
Instruction
- Spiralize the zucchini. Toss zucchini with 1/2 tsp. salt in a strainer and set over a bowl; let sit for 15 minutes. Gently squeeze zucchini noodles to release any liquid, discard the liquid and place the zucchini in a bowl, set aside for now.
