Ingredients

The following ingredients have 4 Servings
  • 6 small zucchini (or 2-3 large)
  • 1 tsp. salt
  • 1 1/2 lb. chicken cutlets (about 5-7 cutlets)*
  • 1/3 cup All-Purpose Flour*
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  • 4 Tbsp. butter, divided
  • 2 Tbsp. olive oil, divided
  • 2 large fresh lemons, squeezed (about 1/3 cup)
  • 3 Tbsp. capers
  • 1/2 cup white wine (or chicken broth)
  • 2 cloves garlic
  • 1 tsp. fresh basil
  • 1 (14.5 oz.) can diced tomatoes with chiles

Instruction

  • Spiralize the zucchini. Toss zucchini with 1/2 tsp. salt in a strainer and set over a bowl; let sit for 15 minutes. Gently squeeze zucchini noodles to release any liquid, discard the liquid and place the zucchini in a bowl, set aside for now.
