The following ingredients have 4 Servings
- 1 cup sugar
- 4 tablespoons butter
- 2-3 lemons (for lemon juice and lemon zest)
- 4 eggs, separated
- 1 pie crust
Instruction
- Cream sugar with butter until light and fluffy.
- Beat in egg yolks.
- Beat in grated lemon rind and juice.
- Beat egg whites in a separate bowl (with clean beaters) until stiff peak forms, then lightly fold this into the pie mixture.
- Pour into the pie shell and bake at 350 until set and golden brown on top (about 25 to 30 minutes).
