Ingredients

The following ingredients have 4 Servings
  • 1 cup sugar
  • 4 tablespoons butter
  • 2-3 lemons (for lemon juice and lemon zest)
  • 4 eggs, separated
  • 1 pie crust

Instruction

  • Cream sugar with butter until light and fluffy.
  • Beat in egg yolks.
  • Beat in grated lemon rind and juice.
  • Beat egg whites in a separate bowl (with clean beaters) until stiff peak forms, then lightly fold this into the pie mixture.
  • Pour into the pie shell and bake at 350 until set and golden brown on top (about 25 to 30 minutes).
