Ingredients

The following ingredients have 4 Servings
  • 250g butter
  • 1 tbs lemon rind grated
  • 1 cup caster sugar
  • 3 egg separated
  • 2 cup self-raising flour
  • 1 cup buttermilk
  • 1/3 cup lemon juice
  • 3/4 cup sugar
  • 1/4 cup water

Instruction

  • Grease and lightly flour a 20 cm ring pan.
  • Cream butter, lemon rind and sugar.
  • Beat in egg yolks one at a time until combined.
  • Stir in half the sifted flour and half the buttermilk.
  • Add remaining flour and buttermilk.
  • Beat egg whites until soft peaks form, then fold lightly into the cake mixture.
  • Pour mixture into pan and bake at 180C for an hour.
  • Pour hot lemon syrup over the hot cake.
