Ingredients

The following ingredients have 8 Servings
  • 500g biscuits
  • 185g butter melted
  • 170g lemon jelly
  • 2 tsp lemon essence
  • 1 tsp vanilla essence
  • 375ml evaporated milk chilled
  • 250g cream cheese
  • 4 passionfruit
  • 3/4 cup caster sugar
  • 3/4 cup boiling water

Instruction

  • Process biscuits to fine crumbs.
  • Mix together biscuit crumbs and melted butter or margarine and press into a lined spring form cake tin.
  • Place into fridge to set.
  • Whip cream cheese and caster sugar until light and fluffy.
  • In a different bowl whip evaporated milk well.
  • Dissolve jellies in boiling water and add jelly to cream cheese and whip.
  • Add evaporated milk, lemon, vanilla and passionfruit and whip.
  • Pour over biscuit base and set in fridge,
  • Decorate with cream and fruit of choice.
