Ingredients

The following ingredients have 4 Servings
  • 50g butter
  • 200g golden caster sugar
  • 1 lemon, zested
  • 1 lime, zested
  • 50ml lemon juice
  • 50ml lime juice
  • 3 eggs, separated
  • 50g plain flour
  • 250ml milk

Instruction

  • Heat oven to 180c/fan 160/gas 4. Beat butter, sugar and lemon and lime zest together in a mixer. Add juices, egg yolks, flour and milk one by one to make a smooth batter. Pour into a large bowl.
  • Whisk egg whites until firm – fold into the batter. Pour into 4 buttered ovenproof dishes and put in a baking tray half filled with hot water. Bake for 25-30 minutes until lightly browned and set.
