Ingredients

The following ingredients have 5 Servings
  • 6 cups chicken broth
  • 3 -inch knob of fresh ginger (peeled and sliced into 1/4-inch slices)
  • 4 Tbsp red or white miso paste (the amount depends on the brand of miso you have - see notes)
  • 2 cups coconut milk
  • 1 tsp sugar
  • Salt to taste
  • 1 lb angel hair pasta / spaghetti / fettucini / udon/ ramen works just great (cooked according to instruction)
  • 4 cups leftover turkey (I prefer dark meat, but use what you like) (shredded)
  • 3 spiced boiled eggs (halved- see notes)
  • Japanese pickled ginger
  • 2 stalks green onions (thinly sliced)
  • 8 oz snap peas
  • 2 cloves garlic (finely chopped)
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking oil
