Ingredients

The following ingredients have 2 Servings
  • 1 tablespoon olive oil
  • 2 10-inch tortillas
  • 4 oz. brie cheese (brine removed and cut into thin slices)
  • ¼ cup cranberry sauce
  • ½ cup leftover shredded turkey
  • 2 teaspoons fresh thyme
  • ¼ cup leftover gravy for dipping

Instruction

  • Heat a large skillet over medium heat. Add olive oil. 
  • When the olive oil is fragrant, add 1 tortilla to the skillet and spread the brie cheese out over the tortilla. Cover the skillet for 3 minutes to allow the cheese to melt. 
  • Uncover the skillet and scoop the cranberry sauce over the brie cheese. Spread it out evenly. 
  • Top the cranberry sauce with the shredded turkey and sprinkle with fresh thyme. 
  • Place the other tortilla on top of the tortilla and carefully flip the quesadilla over with a spatula. 
  • Cover the skillet and brown the second tortilla for another 3 minutes. 
  • Remove the quesadilla when the cheese is melted and the tortilla has browned. 
  • Cut into 4 wedges and serve with leftover gravy.
