Ingredients

The following ingredients have 2 Servings
  • 1 large size pizza base, home-made or store bought
  • 300 g leftover cooked lamb, chopped
  • 1 teaspoon cooking oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 3 cloves crushed garlic
  • 2 tomatoes, de-seeded, diced
  • 1/2 red onion, finely chopped
  • 1 tablespoon olive oil
  • 1 pinch salt and pepper
  • 100 g feta, crumbled into small chunks
  • 1/2 cup Greek yoghurt
  • 50 g rocket

Instruction

  • Preheat oven to 240 degrees. Prepare pizza base on an oven tray.
  • In a saucepan heat cooking oil and sauté 2 crushed garlic cloves. Add the spices and cook for 1 minute or until aromatic. Add the leftover lamb and mix. Take off the heat and allow to cool.
  • In a bowl, mix together tomatoes, red onion, remaining crushed garlic clove and olive oil. Season with salt and pepper.
  • Spread tomato mix over the pizza base evenly.
  • Top the pizza base with the lamb and crumbled feta.
  • Bake 10 - 15 minutes until feta is just browning
  • Cut up pizza and served with dollops of Greek yoghurt and rocket on the side.
