Ingredients
The following ingredients have 2 Servings
- 1 large size pizza base, home-made or store bought
- 300 g leftover cooked lamb, chopped
- 1 teaspoon cooking oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 3 cloves crushed garlic
- 2 tomatoes, de-seeded, diced
- 1/2 red onion, finely chopped
- 1 tablespoon olive oil
- 1 pinch salt and pepper
- 100 g feta, crumbled into small chunks
- 1/2 cup Greek yoghurt
- 50 g rocket
Instruction
- Preheat oven to 240 degrees. Prepare pizza base on an oven tray.
- In a saucepan heat cooking oil and sauté 2 crushed garlic cloves. Add the spices and cook for 1 minute or until aromatic. Add the leftover lamb and mix. Take off the heat and allow to cool.
- In a bowl, mix together tomatoes, red onion, remaining crushed garlic clove and olive oil. Season with salt and pepper.
- Spread tomato mix over the pizza base evenly.
- Top the pizza base with the lamb and crumbled feta.
- Bake 10 - 15 minutes until feta is just browning
- Cut up pizza and served with dollops of Greek yoghurt and rocket on the side.
