Ingredients
The following ingredients have 4 Servings
- 2 C leftover corned beef (diced)
- 2 C leftover accompanying vegetables (potatoes, cabbage, carrots diced)
- 1/2 onion (diced)
- 1/2 C chicken broth
- 1/2 C leftover cooking liquid (or use all chicken broth)
- 1 can cream of mushroom (or cream of potato, cream of celery)
- 1/2 tsp dried thyme
- 1 C whole milk or cream
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Instruction
- In a large saucepan, add corned beef, vegetables, onion, chicken broth, cooking liquid, cream of mushroom soup and dried thyme over medium heat.
- Bring to a bubble and then reduce heat to simmer. Cover and simmer 10-15 minutes.
- Add milk, salt and pepper and simmer uncovered 15 minutes.
- Optional, garnish with sliced green onions.
