Ingredients

The following ingredients have 4 Servings
  • 250g jasmine rice, cooked
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 3 eggs, lightly beaten
  • 1/2 onion, medium, diced
  • 1 cup bacon rashers, cut into pieces
  • 1/4 cup soy sauce
  • 1 chicken stock cube
  • 1/2 tsp crushed garlic
  • 2 tbs olive oil
  • 1 pinch pepper

Instruction

  • Heat rice as per microwave instructions.
  • Heat oil in large pot. Add bacon and cook for 2 minutes.
  • Add onion and cook for a further 2 minutes.
  • Add frozen corn and peas. Cook for 3 minutes.
  • Make room in the middle of the pot, add the eggs and stir fry for about 2 minutes.
  • Add the garlic, soy sauce, pepper, chicken stock cube and rice. Stir until mixed through.
