The following ingredients have 16 Servings
  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of ground cloves (optional)
  • 1/2 teaspoon salt
  • 1 pound medium carrots (peeled, grated and patted dry (about 7))
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 4 large eggs
  • 1 1/2 cups canola or vegetable oil
  • 2 cups cream cheese ( softened but still cool (16 ounces))
  • 12 tablespoons unsalted butter (softened but still cool (1 1/2 sticks))
  • 1 teaspoons vanilla extract
  • 2 1/2 cups confectioners' sugar (sifted)
  • Chopped pecans for garnish (optional)
