  • 2 cups baby spinach (roughly chopped)
  • 2 cups baby kale (roughly chopped)
  • 1 cup zucchini (grated)
  • 1 ½ cups ricotta cheese (low-fat, (15 ounces))
  • ⅓ cup parmesan cheese (grated)
  • 1 cup mozzarella cheese (grated, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 pinch nutmeg (grated, (optional))
  • 2 tablespoons parsley (minced, for garnish)
  • 1 cup tomatoes (peeled and diced)
