  • 5 whole cloves
  • 1 teaspoon Sichuan peppercorn
  • 5 cloves garlic
  • 1 thumb ginger (, sliced)
  • 1 cup scallion (, chopped (the white part))
  • 5 chili pepper (, dried)
  • 2 bay leaves
  • 1 whole nutmeg seed
  • 1 star anise
  • 1 cinnamon stick ((about 6 centimeters / 2.4 inches long))
  • 1 teaspoon fennel seed
