The following ingredients have 4 Servings
- 8 lamb loin chops
- 4-5 tablespoons extra-virgin olive oil, divided

- 1 head of garlic, halved horizontally
- 1 onion, peeled, quartered
- 1 carrot, peeled, cut in large chunks
- 3 thyme sprigs, tied in cheesecloth
- 1 bay leaf
