The following ingredients have 4 Servings
- 1 lb. (500g) ground lamb
- 1/2 cup white onions, finely chopped
- 2 large cloves garlic, pressed
- 1 tbsp. fresh mint, chopped
- 1 tbsp. fresh parsley, chopped
- 2 tsp. ground cumin
- 1 tsp. mild paprika
- 1/4 tsp. cayenne pepper, or to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- ground Himalayan sea salt, to taste
- olive oil, for brushing meat plus coating baking sheet and griddle
- 1/2 cup plain yogurt
- 1 tbsp. tahini (see Recipe)
- 1/2 tbsp. freshly squeezed lemon juice
- 1 tsp. mint leaves, finely chopped
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1/2 tsp. ground cumin
