Ingredients

The following ingredients have 4 Servings
  • 3 tsp light soy sauce
  • 2 tsp grapeseed oil or peanut oil
  • 1 tsp caster sugar
  • 1 tsp dried chilli flakes
  • 1/2 tsp sesame oil
  • Juice of 1 lime
  • 300g skinless sashimi-grade snapper fillet, pin-boned
  • 2 spring onions, thinly sliced on an angle

Instruction

  • To make the dressing, combine all the ingredients, except the snapper and spring onion, in a bowl and whisk to combine. Set aside until ready to use.
  • Using a sharp knife, very thinly slice snapper on the diagonal into 5mm-thick slices. Arrange snapper on plates, then drizzle with dressing and garnish with spring onion to serve.
