- 3 tbsp coconut sugar
- ¼ cup rice vinegar
- ½ cup coconut aminos
- 1 tbsp toasted sesame oil
- 2.5 pounds boneless skinless chicken thigh
- 1 tsp kosher salt
- ½ tsp white pepper
- 6 [12-inch] wooden skewers
- 1 bunch scallions, (root ends trimmed)
- 1 tbsp avocado or olive oil
