  • 3 tbsp coconut sugar
  • ¼ cup rice vinegar
  • ½ cup coconut aminos
  • 1 tbsp toasted sesame oil
  • 2.5 pounds boneless skinless chicken thigh
  • 1 tsp kosher salt
  • ½ tsp white pepper
  • 6 [12-inch] wooden skewers
  • 1 bunch scallions, (root ends trimmed)
  • 1 tbsp avocado or olive oil
