Ingredients

The following ingredients have 4 Servings
  • 1 lb. ground beef
  • 1/2 onion (diced)
  • 4 to 5 cups romaine lettuce
  • 1 cup grape tomatoes (halved)
  • 1 avocado (peeled and diced)
  • 1 bell pepper (diced)
  • 1 green onion (sliced)
  • 2 tbsp. taco seasoning
  • 2 tbsp. coconut oil
  • Sea salt and freshly ground black pepper
  • 1/2 cup olive oil
  • 3 tbsp. fresh lime juice
  • 1 garlic clove (minced)
  • 1/4 cup fresh cilantro (minced)
  • 1/4 tsp. chili powder

Instruction

  • Heat coconut oil in a skillet over high heat; add the onion and the ground beef.
  • Cook until the beef is browned, sprinkle with the taco seasoning, and cook, stirring until well mixed.
  • In a bowl, combine all the ingredients for the vinaigrette and whisk until well emulsified.
  • In a salad bowl, toss together the lettuce, tomatoes, bell pepper, avocado, green onion, and ground beef.
  • Drizzle with the vinaigrette, give everything another toss, and serve.
