Ingredients
The following ingredients have 4 Servings
- 1 lb. ground beef
- 1/2 onion (diced)
- 4 to 5 cups romaine lettuce
- 1 cup grape tomatoes (halved)
- 1 avocado (peeled and diced)
- 1 bell pepper (diced)
- 1 green onion (sliced)
- 2 tbsp. taco seasoning
- 2 tbsp. coconut oil
- Sea salt and freshly ground black pepper
- 1/2 cup olive oil
- 3 tbsp. fresh lime juice
- 1 garlic clove (minced)
- 1/4 cup fresh cilantro (minced)
- 1/4 tsp. chili powder
Instruction
- Heat coconut oil in a skillet over high heat; add the onion and the ground beef.
- Cook until the beef is browned, sprinkle with the taco seasoning, and cook, stirring until well mixed.
- In a bowl, combine all the ingredients for the vinaigrette and whisk until well emulsified.
- In a salad bowl, toss together the lettuce, tomatoes, bell pepper, avocado, green onion, and ground beef.
- Drizzle with the vinaigrette, give everything another toss, and serve.
