  • 1/4 cup Oat Fiber  (see notes)
  • 2/3 cup Swerve Confectioners
  • 3 whole eggs
  • 1/2 cup puréed fresh strawberries
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 2 teaspoons baking powder
  • 1 teaspoon  vanilla extract
  • Pinch of salt
  • For the Frosting
  • 8 ounces cream cheese
  • 1/4 cup puréed fresh strawberries
  • 1/4 cup unsalted butter (room temperature)
  • 1/3 cup  Swerve confectioners
  • Optional: 2 tablespoons finely ground freeze dried strawberries (see notes)
