Ingredients
The following ingredients have 4 Servings
- 1 tablespoon Olive Oil
- ½ Red Onion (diced)
- 7 ounces Basic Ground Beef
- 2 teaspoons Taco Seasoning
- ⅓ cup Keto Enchilada Sauce
- Salt (to taste)
- Pepper (to taste)
- 3 ounces Pork Rinds
- ½ cup Cheddar Cheese (shredded)
- ¼ cup Black Olives (sliced)
- 4 tablespoons Tomato (diced)
- 1 Scallion (sliced)
- ¼ cup Sour Cream
Instruction
- Place a nonstick frying pan over high heat.
- Add the oil and half of the diced red onion, saute for 1 minute.
- Add the browned beef and saute for another minute before adding the taco seasoning and mix well.
- Saute for another minute before adding the enchilada sauce. Add salt and pepper to taste and mix well.
- Remove from the heat and set aside.
- Preheat your broiler/grill to high or around 200c/390F.
- Spray a sheet pan with olive oil and evenly spread out your pork rinds.
- Gently spoon over the ground beef mixture and sprinkle over the cheese.
- Broil/Grill until the cheese is melted and bubbling - about 5-8 minutes.
- Sprinkle over the remaining diced onion, along with the black olives, tomato, and scallions. To make fancy stripes with your sour cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
- Serve immediately
