Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon Olive Oil
  • ½ Red Onion (diced)
  • 7 ounces Basic Ground Beef
  • 2 teaspoons Taco Seasoning
  • ⅓ cup Keto Enchilada Sauce
  • Salt (to taste)
  • Pepper (to taste)
  • 3 ounces Pork Rinds
  • ½ cup Cheddar Cheese (shredded)
  • ¼ cup Black Olives (sliced)
  • 4 tablespoons Tomato (diced)
  • 1 Scallion (sliced)
  • ¼ cup Sour Cream

Instruction

  • Place a nonstick frying pan over high heat.
  • Add the oil and half of the diced red onion, saute for 1 minute.
  • Add the browned beef and saute for another minute before adding the taco seasoning and mix well.
  • Saute for another minute before adding the enchilada sauce. Add salt and pepper to taste and mix well.
  • Remove from the heat and set aside.
  • Preheat your broiler/grill to high or around 200c/390F.
  • Spray a sheet pan with olive oil and evenly spread out your pork rinds.
  • Gently spoon over the ground beef mixture and sprinkle over the cheese.
  • Broil/Grill until the cheese is melted and bubbling - about 5-8 minutes.
  • Sprinkle over the remaining diced onion, along with the black olives, tomato, and scallions. To make fancy stripes with your sour cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
  • Serve immediately
