Ingredients

The following ingredients have 6 Servings
  • 1 pound Ground Beef
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon black pepper
  • 1 Green Bell Pepper-chopped
  • 2 medium Zucchini, chopped
  • 1 cup Eden Black Soy Beans, rinsed
  • 2 tablespoons tomato paste

Instruction

  • In a large skillet over medium-high heat, combine the ground beef, salt and pepper. Cook and crumble the ground beef until it is cooked through. Remove any excess grease from the pan.
  • Stir in the green bell pepper and zucchini. Reduce the heat to medium and continue to cook for 10 minutes more, until the zucchini is fork tender.
  • Stir in the black soy beans and tomato paste. Let cook for 5 minutes more. Season with salt and pepper to taste and serve. Makes 6 servings
