Ingredients
The following ingredients have 4 Servings
- 1 tablespoon Olive Oil
- 2 cloves Garlic (finely chopped)
- 1 small Onion (diced)
- 1 stick Celery (diced)
- ½ Green Pepper (diced)
- 1 teaspoon Salt
- 8 ounces Ground Beef
- 8 ounces Ground Pork
- 3 teaspoon Homemade Cajun Spice
- 3 cups Cauliflower (riced)
- ¼ cup Chicken Stock
- 1 ounce Salted Butter
- 1 Scallion (sliced)
Instruction
- Place a large nonstick frying pan over high heat. Add the oil, garlic, onion, and celery. Saute for 2 minutes.
- Add the green pepper and salt. Saute for another minute.
- Add the ground beef and pork, and break up. Saute until browned and cooked through.
- Add the cajun spice and mix well, then sprinkle over the cauliflower rice. Leave it to steam for 1 minute, then add the stock.
- Saute, whilst stirring for 5-8 minutes, until the cauliflower rice is cooked through.
- Turn off the heat and add the butter. Allow to melt then stir through.
- Sprinkle with scallions and serve hot.
