Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic (finely chopped)
  • 1 small Onion (diced)
  • 1 stick Celery (diced)
  • ½ Green Pepper (diced)
  • 1 teaspoon Salt
  • 8 ounces Ground Beef
  • 8 ounces Ground Pork
  • 3 teaspoon Homemade Cajun Spice
  • 3 cups Cauliflower (riced)
  • ¼ cup Chicken Stock
  • 1 ounce Salted Butter
  • 1 Scallion (sliced)

Instruction

  • Place a large nonstick frying pan over high heat. Add the oil, garlic, onion, and celery. Saute for 2 minutes.
  • Add the green pepper and salt. Saute for another minute.
  • Add the ground beef and pork, and break up. Saute until browned and cooked through.
  • Add the cajun spice and mix well, then sprinkle over the cauliflower rice. Leave it to steam for 1 minute, then add the stock.
  • Saute, whilst stirring for 5-8 minutes, until the cauliflower rice is cooked through.
  • Turn off the heat and add the butter. Allow to melt then stir through.
  • Sprinkle with scallions and serve hot.
