Ingredients

The following ingredients have 4 Servings
  • 2 lbs boneless skinless chicken thighs (about 10 pieces, cut into strips)
  • 1 red pepper ( seeded and sliced into small strips)
  • 1 large onion ( peeled and sliced into small strips)
  • 2 tbsp fajita seasoning 
  • 2 tsp salt (***)
  • 2 tbsp oil

Instruction

  • Preheat oven to 400.
  • Toss all the ingredients together on a large rimmed baking sheet.
  • Bake for 35-40 minutes or until the chicken is cooked and the vegetables are roasted.
  • Serve with your favorite fajita toppings!
