The following ingredients have 12 Servings
- 2 1/4 cups blanched almond flour (260 grams)
- 2 tablespoons coconut flour
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon freshly ground nutmeg
- 2 tablespoons cinnamon
- 1 cup Swerve Granulated
- 1 large carrot (shredded)
- 1/2 cup unsalted butter (can use avocado oil)
- 6 extra large eggs
- 4 tablespoons sour cream (60 grams)
- 1/4 cup almond milk (unsweetened)
- 1 cup chopped pecans (or walnuts)
- 16 ounces cream cheese
- 1 cup salted butter (8 ounces)
- 2 1/2 cups Confectioner's Swerve
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream (if needed)
Instruction
- Preheat oven to 335 degrees F. 170 C.
- Line each bottom of cake pans with parchment paper. Spray with baking spray.
