Ingredients

The following ingredients have 20 Servings
  • 1 cup Almond Flour
  • 1 cup Unsweetened Desiccated Coconut (finely shredded)
  • ⅓ cup Powdered Erythritol
  • 1 Lemon (zest only)
  • 2 tablespoons Lemon Juice
  • 3.5 ounces Cream Cheese (softened)
  • 1 teaspoon Vanilla Essence
  • ⅓ cup Unsweetened Desiccated Coconut (for coating)

Instruction

  • In a mixing bowl, add the almond flour, coconut, and sweetener. Mix together.
  • Add the remaining ingredients, except the extra coconut, and mix into a thick dough.
  • Take tablespoon-sized pieces of dough and roll into balls.
  • Roll each of the balls through the extra coconut and place onto a cookie sheet.
  • Place in the fridge for 15 minutes before enjoying!
