Ingredients
The following ingredients have 4 Servings
- 300 gr glutinous rice / sticky rice (soak for at least 4 hours if cooking on the stove)
- 150 ml water
- 225 ml coconut milk
- 1 pandan leaf (knotted)
- Pinch of salt
- 300 gr grated unsweetened coconut (see notes)
- 2 bay leaves
- 1 kaffir lime leaf
- 1- inch galangal (bruised)
- 1 Tbsp coconut sugar (or use brown sugar)
- 10 gr dried shrimp (soaked with warm water for 10 minutes)
- 1 red chili (optional)
- 2 shallots (peeled)
- 2 cloves garlic (peeled)
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
