Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon olive oil
  • ½ cup onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (9-ounce) package refrigerated three cheese tortellini
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 3 cups kale (chopped)
  • 2 tbsp grated Parmesan cheese

Instruction

  • In a large pot over high heat, add olive oil. When the pan and the oil are hot, turn the heat down to medium.
  • Add onions and garlic. Stir occasionally and cook for about 3-5 minutes or until the onions are golden brown.
  • Add the remaining ingredients, except the kale
  • Bring it to a boil and cook for about 7 minutes or until the tortellini is cooked through.
  • Add kale and cook for 2-4 minutes more.
  • Taste and add any extra seasonings, if necessary.
  • Before serving, top the soup with parmesan.
