Ingredients
The following ingredients have 4 Servings
- 1 tablespoon olive oil
- ½ cup onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken or vegetable broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (9-ounce) package refrigerated three cheese tortellini
- ½ tsp dried basil
- ½ tsp dried oregano
- Salt and freshly ground black pepper to taste
- 3 cups kale (chopped)
- 2 tbsp grated Parmesan cheese
Instruction
- In a large pot over high heat, add olive oil. When the pan and the oil are hot, turn the heat down to medium.
- Add onions and garlic. Stir occasionally and cook for about 3-5 minutes or until the onions are golden brown.
- Add the remaining ingredients, except the kale
- Bring it to a boil and cook for about 7 minutes or until the tortellini is cooked through.
- Add kale and cook for 2-4 minutes more.
- Taste and add any extra seasonings, if necessary.
- Before serving, top the soup with parmesan.
