Ingredients

The following ingredients have 6 Servings
  • 8 cups kale (stems removed and finely chopped)
  • 1 tablespoon lime juice (fresh)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 apple (cored and sliced)
  • 1 cup blueberries (fresh)
  • 1 avocado (peeled, pitted and sliced)
  • ½ cup feta cheese (crumbled)
  • 2 tablespoon sunflower seeds
  • ½ cup blueberries (fresh)
  • 3 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon balsamic vinegar
  • 2 tablespoon water
  • ⅛ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)

Instruction

  • In a large bowl add the kale, lime juice, olive oil, salt and pepper. Toss really well making sure that all the kale is covered in oil and lime juice.
  • Add the chopped apples, blueberries, avocado, feta cheese and sunflower seeds. 
  • In a blender add all the vinaigrette ingredients and blend until smooth.
  • Drizzle the dressing over the salad and serve.
