Ingredients
The following ingredients have 4 Servings
- 1-12 oz pkg Eat Smart Sweet Kale Vegetable Salad Kit
- 2 cups cooked and cubed chicken
- 4 oz dried rice noodles; softened
- 1 tbsp extra virgin olive oil
Instruction
- Place noodles in a large bowl and fill with HOT water.
- In a wok or large skillet over medium-high heat, add the oil.
- Pour contents of salad kit into the wok/skillet (not the salad dressing packet)
- Coat the vegetables in the oil and cook until the veggies begin to soften, 3-5 minutes.
- Add the chicken, mix well, cook an additional 1-2 minutes
- Drain the noodles and had slowly to the wok/skillet. Adding too many at one time will cause clumping.
- Once the vegetables, chicken and noodles are thoroughly mixed, add the salad dressing, just a bit at a time, stirring it in completely before adding more.
- After the salad dressing has been incorporated, add the cranberries and pepitas, Toss well and serve.
