  • 1 1/2 lbs butternut squash, peeled and diced into 1/2" cubes
  • 1 (14 oz can) chickpeas, drained and washed
  • 4 cups fresh or frozen cauliflower rice
  • 2 tsp kosher salt, divided
  • 1 tsp black pepper, divided
  • 1 tsp cumin
  • 5 cups kale, chopped and stems removed
  • 1/4 cup pepitas, roasted
  • 1/2 cup feta cheese
  • 2 avocado, pitted, peeled and diced into 1/2" cubes
  • 1/2 cup fresh cilantro
  • 1/3 cup olive oil
  • 2 tbsp white vinegar
  • 1 tbsp honey
  • 1 lime, juiced
  • 1 garlic clove, minced
  • 1/4 tsp kosher salt
  • 2 tbsp water (if needed to thin out)
