- 4 tbsp olive oil, divided
- 1 1/2 lbs butternut squash, peeled and diced into 1/2" cubes
- 1 (14 oz can) chickpeas, drained and washed
- 4 cups fresh or frozen cauliflower rice
- 2 tsp kosher salt, divided
- 1 tsp black pepper, divided
- 1 tsp cumin
- 5 cups kale, chopped and stems removed
- 1/4 cup pepitas, roasted
- 1/2 cup feta cheese
- 2 avocado, pitted, peeled and diced into 1/2" cubes
- 1/2 cup fresh cilantro
- 1/3 cup olive oil
- 2 tbsp white vinegar
- 1 tbsp honey
- 1 lime, juiced
- 1 garlic clove, minced
- 1/4 tsp kosher salt
- 2 tbsp water (if needed to thin out)
