Ingredients
The following ingredients have 4 Servings
- 1 small clove garlic
- ¼ teaspoon salt
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon freshly ground pepper
- 1 5-ounce package Earthbound Farm Kale Italia
- ½ cup sliced toasted almonds
- ½ cup shredded Romano cheese
- 8 anchovy fillets, optional
Instruction
- Chop garlic, sprinkle with salt and continue chopping and mashing with the side of a chef’s knife until a paste forms. Scrape into a large salad bowl. Whisk in oil lemon, Dijon and pepper. Add kale Italia, almonds and Romano and toss to coat. Serve on four plates topped with Anchovy fillets if using.
