Ingredients

The following ingredients have 4 Servings
  • 1 small clove garlic
  • ¼ teaspoon salt
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon freshly ground pepper
  • 1 5-ounce package Earthbound Farm Kale Italia
  • ½ cup sliced toasted almonds
  • ½ cup shredded Romano cheese
  • 8 anchovy fillets, optional

Instruction

  • Chop garlic, sprinkle with salt and continue chopping and mashing with the side of a chef’s knife until a paste forms. Scrape into a large salad bowl. Whisk in oil lemon, Dijon and pepper. Add kale Italia, almonds and Romano and toss to coat. Serve on four plates topped with Anchovy fillets if using.
