The following ingredients have 4 Servings
- 1 cup grated yellow pumpkin
- 2 cups plain yogurt
- salt to taste
- 1/4 teaspoon roasted cumin powder
- 1/4 teaspoon red chili powder
- 1 teaspoon chopped coriander
- 1 teaspoon chopped green chili
Instruction
- Start by preparing the pumpkin. We need 1 cup of grated pumpkin, so buy approximately 300 grams slice. Wash the pumpkin slice and peel the skin using a sharp knife. Grate it using the medium hole of the box grater. Boil 3 cups of water in a pan.
- When it comes to a rolling boil, add 1 cup of grated pumpkin and cook for 4-5 minutes on medium heat.
- Strain the pumpkin using a soup strainer and let it cool for some time. You can use the leftover water to knead the dough or add it to the curries.
- Whisk 2 cups of yogurt in a medium size mixing bowl using a wire whisk
- Add salt to taste, ¼ tsp roasted cumin powder, ¼ tsp red chili powder, 1 tsp chopped coriander, and 1 tsp chopped green chili, and mix well.
- Add the cooked pumpkin to the bowl and mix well. Garnish with coriander, chilies, and red chili powder.
- Serve chilled.
