Ingredients
The following ingredients have 12 Servings
- 34 ounces cornbread mix (4 boxes)
- 1 onion (diced)
- 2 stalks celery (diced)
- 1 green bell pepper (diced)
- 2 cups chicken broth
- 1 tablespoon butter
- Salt & pepper to taste
Instruction
- Mix and bake all 4 cornbread mixes according to package instructions - let cool, crumble and set aside
- Set oven on at 400 degrees
- In a large pot cook onion, celery, and bell pepper in butter until soft and fragrant
- Stir in 1 carton of chicken broth and remove from heat
- Add in crumbled cooked cornbread a little at a time until well combined
- Continue to alternate adding cornbread and 2nd carton of chicken broth
- Final mixture should have a little extra moisture so it won’t dry out during baking
- Spray or coat a 13x9 pan with cooking spray or oil and add the mixture
- Bake until firm in the middle and golden brown on top, about 30-45 minutes
