Ingredients

The following ingredients have 12 Servings
  • 34 ounces cornbread mix (4 boxes)
  • 1 onion (diced)
  • 2 stalks celery (diced)
  • 1 green bell pepper (diced)
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Salt & pepper to taste

Instruction

  • Mix and bake all 4 cornbread mixes according to package instructions - let cool, crumble and set aside
  • Set oven on at 400 degrees
  • In a large pot cook onion, celery, and bell pepper in butter until soft and fragrant
  • Stir in 1 carton of chicken broth and remove from heat
  • Add in crumbled cooked cornbread a little at a time until well combined
  • Continue to alternate adding cornbread and 2nd carton of chicken broth
  • Final mixture should have a little extra moisture so it won’t dry out during baking
  • Spray or coat a 13x9 pan with cooking spray or oil and add the mixture
  • Bake until firm in the middle and golden brown on top, about 30-45 minutes
