Ingredients

The following ingredients have 4 Servings
  • 4 slices thick hearty bread
  • 2 whole roasted jalapeno peppers, (seeds removed and chopped)
  • 2 ounces softened cream cheese
  • 2 ounces cheddar cheese (freshly grated)
  • 2 ounces monterey jack cheese (freshly grated)
  • ½ tsp minced garlic
  • ⅛ tsp black pepper
  • ⅛ tsp salt
  • 2 TBS butter (softened)

Instruction

  • Add the cream cheese, HALF the shredded cheeses (set the other half aside), garlic, spices, and chopped jalapenos to a bowl and mix thoroughly. Set aside.
  • Taking 4 slices of bread, butter one side of each slice of bread. Place the buttered sides face down. Add half of the cream cheese mixture to 2 slices of bread. Top the other 2 slices with the remaining shredded cheese. Place the cream cheese mixture slice of bread on top of the other slice, with the buttered sides facing out.
  • Using a heavy bottom skillet, heat over medium heat for 1-2 minutes. Add sandwiches to the skillet and cook 3-4 minutes on the first side. Once golden, flip and cook for 2 minutes on the next side.
  • Remove from the skillet, cut sandwiches in half, and serve immediately.
