Ingredients

The following ingredients have 4 Servings
  • 1 Rotisserie Chicken, (shredded, skin removed)
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon lime juice
  • ⅛ teaspoon cumin
  • ⅛ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • 2 heads Romain Lettuce, (chopped)
  • 1 Roma Tomato, (chopped)
  • 1 small red onion, (chopped)
  • 3 strips bacon, (cooked and crumbled)
  • 1 avocado, (cut into strips)
  • 1 tablespoon cilantro, (chopped)
  • 1 can (15.25 ounces) corn
  • 1 cup Jalapeno Ranch Dressing (link to recipe in notes)
  • 1 cup Crispy Fried Jalapenos (link to recipe in notes)

Instruction

  • In a medium bowl, combine shredded chicken, chili powder, lime juice, cumin, cayenne pepper, and garlic powder.
  • In a separate large bowl, combine romaine lettuce, tomato, onion, bacon, avocado, cilantro, corn and 1/2 jalapeno ranch dressing.  Add in chicken. Toss to coat.  (Add more dressing to taste.)
  • Top with crispy fried jalapenos.
  • Serve Immediately.
