The following ingredients have 6 Servings
  • 8 oz ground beef
  • 8 oz ground pork
  • 1/2 cup plain or Italian breadcrumbs
  • 1/3 cup whole milk
  • 3 Tbsp minced fresh parsley
  • 1 tsp kosher salt
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 cup shredded Parmesan cheese
  • 1 large egg
  • 3 Tbsp olive oil ((divided))
  • 1 medium yellow onion, (minced)
  • 2 large carrots, (peeled and diced)
  • 2 stalks celery, (diced)
  • 3 cloves garlic, (minced)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried dill
  • 1/2 cup dry white wine ((chardonnay is my favorite))
  • 9 - 10 cups reduced sodium chicken broth or bone broth
  • 1 cup dried, uncooked acini di pepe pasta
  • 5 oz chopped baby spinach
  • shredded Parmesan cheese (for serving)
