Ingredients

The following ingredients have 8 Servings
  • 2 pounds Italian sausage
  • 5 cups beef stock
  • 1 small chopped onion
  • 1 can petite diced tomatoes, with juice ((14.5 ounce can))
  • 3 ounces tomato paste
  • 3 teaspoons minced garlic
  • 1 1/2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 tablespoons Italian seasoning
  • 1 bag frozen Italian vegetable blend ((16 ounces))

Instruction

  • In a large saucepan, brown the Italian sausage over medium heat. Drain off the fat.
  • Add the stock, onion, tomatoes, tomato paste, spices, and frozen vegetables. Over medium heat, bring to a boil. 
  • Once boiling, cover the soup, turn the burner to low and allow the soup to simmer for 20-25 minutes or until the veggies are tender.
  • Serve immediately.
