  • Sourdough or ciabatta bread (sliced in 1/2 inch slices)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 4 medium tomatoes (firm and ripe (chopped / I remove the seeds and extra pulp))
  • 1 cup yellow cherry tomatoes
  • 1/2 red onion (diced)
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon each salt and pepper
  • 1 1/2 teaspoons dried oregano
  • 1/4 cup fresh basil leaves (chopped)
  • 1/4 cup olive oil (very good quality)
  • Balsamic reduction
  • Fresh basil
