- 3 lbs (1.4 kg) bone-in beef blade roast, fat removed
- 1/4 cup (60 ml) olive oil
- 1 teaspoon (5 ml) cornstarch
- 2 cups (500 ml) chicken broth
- 3 shallots, chopped
- 3 cloves garlic, peeled and halved
- 3 tomatoes, diced
- 2 tablespoons (30 ml) tomato paste
- 16 baby potatoes
- 12 Nantes carrots, peeled (see note)
- 1 sprig fresh thyme
- 1 sprig fresh rosemary
