Ingredients
The following ingredients have 7 Servings
- 5 medium potatoes (halved or whole, boiled in water and cooled)
- 1/3 cup jarred roasted red peppers (chopped)
- 2 green onions (chopped)
- 1 large celery stalk (chopped)
- Salt and pepper to taste
- 3/4 cup mayonnaise
- 1 Tbsp. red wine vinegar
- 1 tsp. sugar
- 1 tsp. dried mustard
- 1/2 tsp. paprika
- 5-6 slices prosciutto (crisped in a fry pan, and crumbled)
- 2 Tbsp. chopped fresh parsley
Instruction
- Slice the potatoes into large bite sized chunks and add them to a large bowl. Add in the roasted red peppers, green onions, and celery. Add salt and pepper to taste. Mix together the mayo, vinegar, sugar, mustard and paprika. Add to the potatoes. Fold in about 3/4 of the prosciutto. Cover and chill until ready to serve. Top with the remaining prosciutto and parsley.
